New favorite sausage

We eat a surprising amount of sausage for people who eat essentially healthy foods. Of course, two sausages in a pan of brown rice and veggies that serves three heartily isn’t a *ton* of sausage…it just seems like when we buy meat, it’s often of the fatty pork kind rather than the skinless chicken breast kind. *shrug* I don’t buy all that “fat is the devil” stuff, anyway.

But back to the sausage! We usually get sweet or sometimes hot Italian-style sausage. There are many to choose from that are made in this general area from happily-pastured pigs, but the only one that has ever really grabbed me was the black pepper, fennel, and sage sausage from DK Cattle. And they apparently went out of business just after I discovered them.

I think, however, I’ve found something as good, or perhaps even better: the bratwurst from Apple Schram. They don’t have a web site, so far as I can tell. However, you can get their sausage at the Peoples’ Food Coop in Ann Arbor. It’s got fantastic flavor, and isn’t too greasy. I hope they keep selling these; they pasture the pigs in the orchards on the fallen apples, among other natural pig foods.

I’m counting this as “something wonderful you can’t get anywhere else.” 🙂

    Funny, we somewhat have something in common. We both like apple-sausages. We simply though occasionally eat the vegetarian field roast apple sausages. Same concept though right? 😉
