Home canning is quite safe

Mom’s Kitchen dug up some great research on the safety of home canning. See her summary, or the full article from the USDA. (She also has a nice collection of WWII posters encouraging canning.)

My summary of her summary? Home canning is safer than eating out at a restaurant. And can jam and fruit, not walrus.

    Thanks for the link back! My canning of peaches this weekend was less than stellar – the peaches weren’t ripe enough to peel easily.

    MK- Did you do the plunge-in-boiling-water thing, like for tomatoes?

    Yes I did…I don’t think they were ripe enough for that to work as it should. I live, I learn! No canning this weekend…I am going camping!
