    What kind of cheese?

      It’s a goat’s milk cheese – queso fresco – that’s only aged about 5 days before eating. It’s similar to pizza-mozzarella in texture. Last time, I used the full amount of lipase for that nice goaty tang; this time, I used less. I’m going for something mild that’s good on pizza and quesadillas.
